Fried Lamb Testicle

Ingredients

- 4 lamb testicles peeled and sliced
- 1 cup flour
- 3/4 tsp. salt
- 1/4 tsp. white pepper
- 1/2 tsp. all-spice
- Vegetable oil, to fry testicles
- 1 tbs. butter
- Juice of 2 lemons
- 2 garlic cloves, mashed ( optional )
- Parsley, chopped for decoration


Preparation

1. Peel the testicles and slice then diagonally into long strips.
2. Mix the flour, salt, pepper and all-spice.
3. Dip the sliced testicles in the flour-spice mixture and fry in hot oil until pinkish in color.
4. When all the testicles are fried, remove most of the oil from the skillet, leaving just 2 tbs. oil. Add the butter and fry the garlic. Add also the lemon juice and pour this sauce over the testicles.
5. Garnish with chopped parsley and serve hot.

Note: The lamb testicles can be barbecued also. In that case, they should be cubed not sliced. Pomegranate syrup can be used instead of lemon juice.
